Bress is a little world unto itself – a working farm, cider mill, restaurant, garden and orchard, vineyard, and homestead – pursuing a strong sustainable philosophy.
Co-owner, winemaker and man of many trades, Adam Marks, follows biodynamic and organic practices, attracting a strong following.
Grapes are sourced from Bendigo, but also further afield, including Macedon Ranges for chardonnay and pinot noir, Yarra Valley for pinot gris and Heathcote for shiraz. Not to mention much further away to Chablis, teaming with Lyne Marchive of Domaine des Malandes to produce old vine chardonnay for the Bress label.
Irreverent in taste, Marks loathes modern furniture favouring antiques throughout the cellar door and homestead accommodation.
Look out for Marks’ Winemaker Weekends offered on the last weekend of each month which are based on the seasons and include the always popular, cider and swine day in October. Alfresco dining is offered from spring to autumn. JENI PORT
