Star Cellar Door
Sanguine Estate, planted in 1997, effortlessly works the strengths of Heathcote shiraz into its wines: purity of fruit, intense colour, black fruits and textural appeal. The cellar door is located inside the winery, a welcoming and rare experience, offering a behind-the-scenes look into the winemaking process. It is also the site for many a Sanguine wine dinner hosted by the owners, the Hunter family.
Patriarch, Tony Hunter, who was attracted to the region by the wines of Jasper Hill, was quite specific in the land he sought out for planting. It had to be on the same ancient Cambrian soil as Jasper Hill, iron-rich earth which is responsible for the deepest colour of any Aussie shiraz as well as contributing natural balance.
Winemaker, Mark Hunter, is fastidious, picking every 12 rows of vines on the 22-hectare vineyard separately, fermenting each and keeping them individually. That’s a lot of work, but it’s well-rewarded. JENI PORT
