It is such a pleasure to judge this list, in a category that more often than not is an afterthought, a catalogue of ubiquitous soft drink brands. Not at Attica.
This is a vibrant selection, right down to the house-made mixtures. The detail and thought given to each element is apparent. These are preparations that take time and effort to perfect, echoing Ben Shewry’s use of native Australian ingredients in the kitchen. It’s a celebration of this county’s unique flora: rosella flowers and allspice; steamed finger lime soda; desert lime and apple cider; rainforest cherry and vanilla. These will give you a sense of it.
So too, the wine pairing menu is extended to matching food with juices and infusions, or a combination of both. As a wine enthusiast, it is not often such offerings would ever be considered over wine, but somehow the author is enticing even the most ardent drinkers into uncharted waters.
Full marks to Attica for acknowledging and respecting there are those who abstain and further, being aware of this developing trend. This is a category that is becoming increasingly important, as consumers drink less, or are simply choosing not to drink at all.

If you are dining at Momofuku Seiōbo, it’s likely you'll know what to expect from the food and the wines. The list offers artisanal producers from around the world, in most cases, as collections of either different vintages or different wines, from the same maker. Expect rare or first-rate producers whose wines are eagerly sought after. These are winemakers on the cutting edge, using minimal inputs, skin contact and daring to be different. In its genre, a world class list.

An outstanding wine list informs and inspires, showcasing new and exciting producers. Though at the same time, it needs to make the diner feel comfortable and confident. Cutler and Co. does all this and more. It is a thrilling list, with original yet considered listings. The wine-by-the-glass list is exceptional, offering wines which vary in style, age and price. Careful management is evident, including with the selection of vintages. It is a list that provides something for everyone: a top range of local and interstate wines, a robust international selection, a wide range of prices and a great selection of signature cocktails, including many with low or no alcohol.
