“Dear Sainte Eloise, if you exist, please send me some money. I don’t ask for much – just enough to buy some bread and a bottle of wine.” The owners of Dear Sainte Éloise wine bar in Potts Point loved George Orwell’s classic 1933 story of desperation and renewal in Down and Out in Paris and London they were inspired to create the quintessential wine bar.

While the wine list celebrates alternative styles and winemakers, rest assured it is always at pains to present quality alternatives of a more conventional nature. Riesling takes on icon status here, as do small independent winemakers.

Start with a glass of sparkling vermentino/grenache blanc from the Languedoc while you pause to consider your options. Will you keep to wines by the glass or take up the offer to try the Mystery White and Red by the glass? If you correctly guess the grape and country of origin, the wine is on the house. Or there’s a seriously tempting feature on Italy’s Foradori winemaker, Elisabetta Foradori, and her teroldego grape with a tranche of 120ml tastings available under Coravin.

And that’s only the first two pages. Be assured of a long night full of many temptations and memories.

An perennial favourite for fine wine lovers in Adelaide, Apothecary 1878 has a wine list that continues to offer a glorious and deep global selection of exceptional wine. The list continues to show a strong focus on high quality producers of ‘best wine regions’ with current and back vintage wines lovingly selected. There are exceptional wines from Burgundy, Champagne and marquee regions of Italy, but the gems are found in Alsace, Rhône and Beaujolais, as examples. Beyond the vinous offering there’s one of Australia’s great collections of spirits, so much so that a designated Scotch whisky pairing is available. Indeed, the single malt selection is epic, with many rarities found amongst the listings. However, the strongest focus is on local wines, a true treasure trove here, though you'll find judicious balance between stalwarts like JJ Hahn, Torbreck and Henschke, alongside the avant-garde of BK Wines, Jauma and Ochota Barrels. A marquee collection emerges once more.

An inventive and completely appealing wine list that travels the globe ably and delivers both marquee and more avant-garde expressions in good measure. Indeed, thrilling to see emerging producers from Germany like Ziereisen set alongside, say, Vasse Felix, though you get the feeling that a lot of the list is dedicated to artisan winemakers and boutique wineries. By the glass clocks in at around 100 different wines – a massive feature of a list and completely impressive for its diversity and depth. It’s wonderful to see good support for the local winemaking community of Western Australia, particularly the younger generation with producers like La Violetta and LAS Vino writ large in the collection. The list also does a nice job of name-checking winemakers themselves, with inclusions alongside their wines for most of the entries in this list. Clever work from The Heritage Wine Bar overall, a very appealing selection emerges with vigour and vim on its side.
