Dan Wegener, of Cott & Co, has built the list around the theme of maritime climates, such as found in Sardinia and Santorini. This focus not only results in the wines pairing beautifully with the seafood-inspired menu, but it gives diners an insight into the importance of climate in wine style. The presentation is modern and inviting, and most wines are available by the glass.
Ishizuka has exquisite proportions, with each wine carefully selected for its merit and how it pairs with the Kaiseki cuisine. Sarah and David Lawler are the minds and palates behind the list, and they aim for harmonious interaction between the wine and food. It’a a polished set of elegant wines with grace, restraint and purpose.
