Rubicon offers up a finely tuned wine list that oscillates between classic European wine producers, definitive fine wines of Australia, and an evolving and thoughtfully chosen collection from the local Canberra District wine region. Drinkers will be thrilled by the raft of excellent grower Champagnes, and titillated by the by-the-glass program bolstered by a Coravin tool. These handy gadgets are increasingly popular, allowing drinkers an ever-changing selection of rarities and “fancy” wines. The list is long with names that thrill wine lovers – Joh. Jos. Prüm, Vinoptima, Hugel, Benjamin Leroux, Massolino. However, it’s a delight to see emerging and younger generation winemakers, too. There’s also has a neat selection of sake, very good sherry, high-end eau de vie and an -impressively lengthy dessert wine list. Overall, it’s a well-rounded list with some clever selections.
