The wine list at Est. has long been known for wines from celebrated, prestige producers from benchmark wine regions. Bordeaux, Burgundy and Champagne are staples. Set alongside are Australia’s leading lights, including top wines from Crawford River, Grosset, Clonakilla, Dalwhinnie, Henschke and Penfolds.  

While the list still retains all of its charm in great wines of the world, there seems to have been a dedicated shift to encompass an even broader spectrum with an evolving selection of wines from cult producers of regions like Jura and Savoie. Adding interest are small-scale grower-producers from Australia’s burgeoning natural-wine scene, bolstered by examples from France and Italy’s established minimalist winemakers. 

This wine list delivers on so many levels. There’s excellent vintages of the top wines from leading regions, cellared rarities and leading lights from NSW’s wine community with a global perspective on where the culture of fine wine is today. It’s a superb, decadently lengthy list of class and distinction. Mike Bennie

The use of a Coravin tool to access cellar-matured and prestige wine, the inclusion of a growing collection of vanguard Australian and European natural wines, the adherence to fine wine culture and a dedicated, well-trained, high end sommelier team all conspire to elevate Quay's wine list to almost its best iteration yet seen. This is a formidable list that sets the tone for any true fine dining establishment in Australia, putting best local wines on a pedestal while showing the richness of a near impossibly deep cellar. Feature pages on lavish Krug Champagne offering add fireworks. Runs of multiple vintages from highlighted producers add extra zest. Bookending the table wine offering is a stupendous collection of aperitif, digestif, spirit, sweet wine, sake and beer - nothing is overlooked or given half measure. Quay has always been impressive for its wine program, it's just shifted up another gear, as hard as that is to fathom. A round of applause to Amanda Yallop and team.

Hall-of-Famer The Botanical keeps working hard to improve its list. This year we see more wines and a vast array of gins, 79 in all. At its heart, this is a world wine list with a strong European bent, putting forward some big names and some exciting brands that you will want to get to know. There's a wine education here for those who embrace it, from an Aussie sparkling red to an Austrian grüner veltliner or maybe a flight of 2013 Victorian pinots. Prices are reasonable.
