With Sam Miller’s Noma-esque food served only in degustation menus,the wine list presents some challenges. Sommelier James Audas has an impeccable background (Noma, both of Tetsuya’s restaurants, Est.). The focus of the 450-bottle international list is on sustainable and minimalist viticulture, and expressions of site. Slanted towards matching the delicate finesse of Miller’s food, it’s much stronger in whites and light to medium-bodied reds than full-bodied reds. There are plenty of established producers of note, but the list is a paean to the cutting edge. Australians such as Shobbrook, Domaine Simha, Jamsheed, Brash Higgins, Ravensworth and Ochota Barrels are in the ascendancy. Germany and Austria are well represented especially by riesling and gruner veltliner. France (especially the Loire), Italy and Spain offer a mouth-watering range of other whites. Burgundy is well represented; the Jura collection is as impressive as any in the country. A similar selection of Australian and European reds promote a diverse listing of new-wave and cutting-edge varieties. peter forrestal

Dining under the sails at the Sydney Opera House is one of the world’s great restaurant experiences, especially at night time.  Start with a glass of aged semillon or fine Champagne before leafing the pages of a sophisticated list that includes quality small local producers and a fine international wines.  Australian chardonnay, pinot noir and shiraz are well-represented.

Budburst is a lively new bar on the Perth scene. Rachael Niall handles the wine list and the bar with aplomb. Impressive with aperitifs, digestifs, spirits and beers as well as the 100 bottle international wine list. It balances established and emerging producers neatly, pays homage to the new wave in sections such as ‘Orange Wine, Skin Contact Whites, Curios’ and draws customers into the list with its headings and her choices.
