A great listing of wines by the glass should not only satisfy a thirst, but fire the imagination. There should be a range of styles that mirror or contrast with the food offered, exploring wines from the local winescape and beyond at a range of pricepoints. And, always, there should be something that works the saliva glands into a frenzy; maybe a quality grower Champagne from André Clouet or one of those new breed of Tassie pinots, including Stoney Rise.

What really shines is the choice of young and aged wines on offer. Black by Ezard at The Star Casino is now re-booted at Black Bar & Grill. The food, including the  famous porterhouse and wagyu steaks, shows a
similar focus to before, as does the international wine list which has now
increased to1000 wines. We are particularly excited to see the new wine feature employing the Coravin wine preservation system to show some cracker super premium wines by the glass such as Suduiraut and Coutet. The adventurous may like to explore the "Naturale and Low Intervention Wines," or dive into the Grower Champagnes. There's a lot of enjoy here . . . for a price.

It's lengthy, impressive and encyclopaedic in its coverage of global wine, from the brilliant by-the-glass offering (and don't miss the stupendous, rare, mature collection), through to brilliant digestifs, there's detail in nearly every category in this gigantic list. Of course, Australian wine is at the forefront with younger generation producers scattered through a list that celebrates history and evolution of Australian wine through the lens of its finest producers. Of course, there's lengthy offerings from Burgundy, Bordeaux, Rhone Valley, Champagne, with consideration especially made for those looking to max out a credit card on something truly special. Enjoyable is also seeing the lesser-known with wines from Austria, South Africa and the Americas woven through the program. Mature wine is also a feature; there'd be few restaurants in Australia that cellar with such impunity as the Rockpool group. This wine list is magnificent in so many ways.
