For 25 years, Stokehouse was a fixture on our dining scene as much as a landmark on the St Kilda foreshore. On January 17, 2014 fire ripped through the century-old timber building. It’s taken three years but an ultra-modern restaurant now stands proudly in its place.

The personable and well-credentialed sommelier, Gavin Cremming steers this exemplary list, one that complements the contemporary fare and vibe.

It’s not too big, hovering at around 550 bottles, yet it is finely-tuned, thrilling and classy, starting with 34 seriously good by-the-glass options think Bollinger La Grande Année, Coriole Fiano or Yeringberg Shiraz. Gems are dotted throughout – Foradori Fontanasanta Manzoni Bianco and Sinapius Pinot Noir – with the right amount of German, Austrian and Spanish wines, plus mini-verticals, latterly from Ghislaine Barthod or Luciano Sandrone, to round out this fabulous list.

Welcome back Stokehouse. It’s been a long time between drinks. JANE FAULKNER

This is a winery restaurant like none other and the wine list fits the pattern perfectly. There is so much to explore in each section: predictably Willow Creek by the glass but an unexpected tiny yet thought provoking range of other possibilities. The rest of this extensive list offers a balance of known and about to be known winemakers and wines: breath-takingly daring, requiring a skilled sommelier and an adventurous diner. Worth a detour.

The wines of Spain has a new champion in Sydney's CBD. It's an extensive list with more than 60 wines by the glass offering an introduction to Spanish cava, sherry, vermouth, and a wonderful range of indigenous varietals. There's the opportunity to dip into the Spanish regions and enjoy modest local wines as well as some of the country's superstars. Not to be missed.

CHAIRMAN'S COMMENTS: Doot Doot Doot has allowed Ollie Tucker to transform the winery restaurant into a voyage of discovery. Balcón by Tapavino pays tribute to all things Spanish with an extraordinary list. Ôter offers a modern French accent to the Flinders Lane scene and Bridge Bar brings a top wine list to Sydney International Airport.
