Sommelier Niels Sluiman’s Australian wine offerings at Jonah’s are top-notch. Sensational rieslings, such as a Robert Stein Reserve, Kilikanoon Mort’s Block, Pewsey Vale Block 1961 and Frankland Estate Isolation Ridge, feature. There’s a serious selection of sauvignon blanc and blends where Sorrenberg, Cherubino and Mount Mary mingle together. Treats including Yangarra Roux Beauté Roussanne or a well-priced Yarra Yering Carrodus Viognier follow, while the chardonnay, pinot noir and shiraz selections are exceptional. Diversity is also on display: Margan Albarino, Jim Barry Assyrtiko, Out of Step Nebbiolo are there, plus cool stuff from producers such as S.C. Pannell, Ochota Barrels and Schwarz Wine Co. fortifieds. You can also savour, at $430 for 100ml, Seppeltsfield Para Tawny 1928 – the year Jonah’s opened. Jane Faulkner

It's great to see wine lists dedicating their pages entirely to Australian wine, and a vindication that Australian wine is perhaps in its best era yet is written large in these pages. This isn't a dodgy theme park ride that some all-Australian lists can run the risks of appearing like, but an homage to great Australian producers that are tried and tested, set alongside those emerging from the avant garde. Therefore, you can get Leconfield, Best's or Seven Hill if you want more traditional Australian wines and styles, but if a younger generation of expressive wines is more your style, then dial in BK Wines Petillant Naturel or Alpha Box & Dice's Golden Mullet Fury white blend. There's loads of emerging varieties in the mix too - try assyrtiko, ugni blanc, verduzzo, gruner veltliner on for size, and all from high quality producers. It's an exciting list, speaking loudly of originality and thoughtful curation. And don't miss the high quality, all-Australian artisan spirit pages too.

Hats off to Australia with this primarily Australian focused wine list. Though not extensive, the wine list has a great selection of wines from around Australia, celebrating the best of the regions and their varietal representatives. Given the spectacular views at Cafe Sydney, this nice tight wine list features most of the varieties and styles you would hope to see, and enables a careful choice without being diverted from the view for too long. Be assured that if you are out for a celebration, the list includes a good selection of Champagne and some great museum selections.

If you want nebbiolo or sangiovese, they are here. Maybe grüner veltliner or bianco d'Alessano, yep those as well. Nomad's list traverses the varietal mix of several countries and yet, all the wines on offer, about 99, are home-grown. And bar two sparkling wines, every single one is available by the glass or carafe. Wow. Just wow.
