Lyons Will is a cool-climate winery, with Oliver Rapson and Renata Morello crafting their wines together. Everything is done by hand and with a strong emphasis on sustainability. Their ethos is simple: the more time spent in the vineyard, the less work to do in the cellar. The result? Good, honest wine with a great acid balance and a clean linear finish.Tastings are held inside the winery, located in the heart of the vineyards. Charcuterie and cheese platters are available to accompany wine by the glass, in an intimate courtyard surrounded by pinot noir vines. It’s a totally immersive experience and about as close as you can get to where the action happens. The winery is the cellar door and the cellar door is in the vineyard. Being a family owned winery, you can chat first-hand with one of the winemakers while they take you through a selection of their wines. That’s how I’d like all my cellar door experiences to be.
