Navy Strength Gimlet
60ml PLC Navy Strength Gin
30ml fresh lime juice
15ml simple syrup
2.5cm of lime peel
Add all ingredients with ice to shaker, shake and double strain into chilled coupe or martini glass. Garnish with dehydrated lime wheel.
Served as a G&T

120ml Capi Dry Tonic
Topped up with ice & garnish with lemon or lime peel.

The Last Word Cocktail
25ml Australian Distilling Co. Melbourne Gin
25ml Green Chartreuse
25ml Maraschino liqueur
25ml fresh lime juice
Put the ingredients in a mixing glass with ice, then stir. Taste after 20-30 seconds of stirring and if the right dilution has been acquired, then pour into a chilled cocktail glass. Serve without ice.

Orange peel to garnish
Combine gin, Rosso and ice in a shaker. Shake until your hands hurt from the cold. Strain into a martini glass with some orange peel (lightly burn the peel if you want to be fancy).

Gin provides a unique platform for expression, and one has an opportunity to overwrite or complement juniper in a multitude of ways. When designing our Fig Gin, it was important to ensure that the fig was the driver and the juniper the carrier, merging together to form a complex yet versatile spirit.
The Fig Gin’s subtle nuances are amplified with ice, lime, tonic and other complementary additions, all bringing out the gin’s complex hidden flavours.
Figs are gently poached to extract the sweet fig aroma, essence, and earthiness. The gin botanicals and spirit show early on the nose with all the fig showing on the palate.
