Built in the 1870s, the heritage-listed former Fyansford Paper Mill industrial complex remains a testament to an extraordinary structure that once utilised the hydro-power of Buckley waterfalls on Barwon River to run the machinery. Today, it’s an arts and cultural precinct with a large space dedicated to Provenance wines. The impressive building, with its cathedral ceiling lined with timber, once housed a 30-metre paper making machine and is now Provenance’s working winery, cellar door and eatery.
Winemaker Scott Ireland with partner Jen Lilburn, and winemaker Sam Vogel, who has a share in the business, spent 18 months ensuring the space, with its 450 millimetre thick bluestone walls, would be both functional and beautiful. Step back into history and admire the place while enjoying the present with a glass of wine and simple but delicious antipasto or a charcuterie plate. JANE FAULKNER
