Late last year, there was a complete revamp of Seville Estate, a pioneer of Yarra Valley wine. Under the watchful eye of winemaker and now general manager, Dylan McMahon, the wines have never been better. Dylan, grandson of the original owners, says “the focus has been on the wine and that won’t change but it was time to bring the estate into the 21st century. We want people to come here to drink, to eat, to stay and say wow.”
While the cellar door opens daily, on weekends starting with Friday lunch, the restaurant fires up with its tilt towards locally sourced produce, including its own, for the weekly changing menu of outstanding modern Australian fare. The dining room is sleek and airy with plenty of space between the blond-wood tables and Thonet-style chairs.
Interior designer Leora McMahon, Dylan’s wife, undertook the stylish fit-out and she has reimagined the original homestead into chic and comfortable accommodation. No expense spared yet there’s no frippery or fuss. Importantly, Seville Estate’s heritage has not been lost, it has simply been given a new lease of life. JANE FAULKNER
