At Banskii, vermouth is the thing. From day one, Rebecca Lines fearlessly dove in and made a commitment to wine infused with botanicals and wormwood, setting forth an exotic and colourful selection for her patrons to explore. This is a superb concept, and refreshing; one that had, until recently, been languishing for decades and more particularly when it came to enjoying the complexities of these artisanal drinks over a little ice, with citrus, soda or tonic.

And it’s not just a handful of examples: Banksii has invested in a who’s-who of the theme, from the best of our domestic producers like Regal Rogue, Causes & Cures and Margan, to the Italian types; Cocchi and Chinato Vergano; and curiosities like Lustau Vermut and Cillar de Silos from Spain. The exploration of all things aperitif goes one step beyond, to include the delicious and tangy bitter drinks that also work their wonders: from staples like Campari and Aperol, to the boutique delights of Italian Bitter Orange from the Adelaide Hills, and Maidenii La Tonique from Central Victoria.
