Immerse yourself in all things ice-cool, calm and collected at Institut Polaire. It’s an upmarket Hobart bar with an ultra-sophisticated selection of wine, gin, whisky and amaro. Cool-climate sourcing is the theme which ties the portfolio together, along with a focus on wines and spirits made from low input farming and natural techniques. Multiple visits are a must to experience the many gems on offer, from flights of whisky, G&Ts and pinot, to snazzy cocktails, fragrant vermouths and a suite of stylish wines.
Owner Louise Radman presents a list which fascinates and excites, with a host of quirky small players, iconic producers and reliable labels. Local wines stand proud alongside select mainland inclusions and international jewels.
Pinot noir is a highlight of the list with an impressive sub-set of contemporary Tasmanian producers, including Chatto and Sailor Seeks Horse, as well as some fancy Burgundian labels and a few New Zealand inclusions.
For something different, there’s a top spread of wines from the Jura and a choice of absinthes. The chic white marble and stainless-steel decor sets the scene perfectly, and there are plenty of local food options.
