For some, by-the-glass is THE wine list. It offers discovery, adventure, and even the chance of a once-in-a-lifetime taste of greatness. Quay head sommelier Amanda Yallop devotes 10 per cent of her list to wines by the glass, including wines that are forever classic (Tyrrell’s Vat 1 Semillon), daring in execution (Ochota Barrels The Slint Vineyard Chardonnay), food-friendly (Domaine Simha Gamay) or simply without peer (Krug Grande Cuvée).
The list doesn’t try to be everything to everyone, but it entices and excites. New-age natural wines and biodynamic styles are embraced alongside more conventional philosophies. Australian wines are the core, in keeping with the contemporary Australian cooking of master chef Peter Gilmore, but there’s a tight selection of contrasting and complementary styles from Germany, France, Italy and New Zealand. The two representatives of Spain, 2012 carignans from Priorat’s Terroir Al Limit, introduce the other feature to this excellent list: the Coravin wine preservation system, which enables sommeliers to offer aged wines or wines of note previously considered way too expensive or rare to serve by the glass.
