Dan Wegener has turned his considerable knowledge, well-respected experience and a big dose of charm towards his restaurant Il Lido, which manages to be humble, yet upmarket, focused, full of energy and confident.

The list walks a tightrope of emerging, boundary-pushing producers from Australia and beyond, and classic rock star producers from the most celebrated regions in the world. It’s focused largely on Italy, although not exclusively, and explores Dan’s love of local producers who are creating high quality and exciting wines. Il Lido is a checklist of Italian superstars: Vietti, Gaja, Ca’ Del Bosco, Ornellaia, Sassicaia, and Aldo Conterno, to name but a few. There are also grower Champagnes across a range of styles.

We love the brief write-ups peppered throughout the list. Many of them speak about visiting the vineyards or talking with a particular producer, and often go on to explain why a certain winery, variety or region is worth trying.

Perch on a stool in this 'dine-in' wine shop, order a house selection of salumi and pickles and drink one of 500 expertly-chosen drops for a mere $10 corkage. The by-the-glass offering consists of mainly young French and Italian wines, though there is an additional high-end selection, some with age, by the half or full glass. By the bottle, the list showcases high-end European wines, including grower Champagnes and edgy, experimental producers, plus aspirational Burgundies. Western
Australian wines are in the minority though there are some carefully chosen interstate and kiwi jewels. Overall, it is a pretty slick listing.

CHAIRMAN'S COMMENTS: The great list from Print Hall has been reborn at Apple Daily while Lalla Rookh Wine Store shows the value of Jeremy Prus’ careful curating. Budburst remains on song; Mayfair Lane introduces a rollicking new tune to Perth and The Shorehouse shows a measure of sophistication.

There is a lot of fun to be had with this eclectic collection of wines.  Though it is a real melange of producers, varieties, vintages and styles so don't be afraid to tap into the sommelier's knowledge for guidance. There is plenty of variety in the by-the-glass section, to perfectly match chef Skye Faithful's delicious food, or choose a bottle from one of the many small producers.  The list is ordered by style, light-to-heavy, which may be of some use if certain producers or regions are unfamiliar.

It is clear that Budburst is a labour of love for owner/sommelier Rachael Niall. The list sits comfortably in its own skin, showcasing affordable lesser known wines from small producers as well as wines of reputation.  To encourage experimentation, you can order a wine flight for $15.  Or splurge on a glass of premium wine, such as Yarra Yering No. 2, delivered via Coravin.  It is a list that coaxes you out of your comfort zone, yet offers a safety net if it all gets too hard.  Slick cocktails, craft beer and respectable spirits add to the charm.

Without a doubt one of Australia's great wine lists and no surprise with talented Dan Wegener at the helm.  Wegener has always led, rather than followed, having the confidence to include a broad spectrum of wines rather be constrained by the whim of fashion. There has been careful curation with each wine serving a purpose, as well as additional treats such as house-made sodas, sparkling aperitifs and classy spirits.   It is an Italian focused list, in line with the restaurant's theme, but it also houses an impressive selection of local WA and interstate producers.  Wegener includes select wines from France, New Zealand, California, Germany and Austria at his discretion.  Each category is commendable, though one must mention the large spread of nebbiolos, Amarones and Super Tuscans, plus the excellent selection of fine chardonnay and pinot noir.  But this list it not all about grandiose names and regions; it is about diversity, balance, quality and detail.

The Wildflower dining room has one of the best views in Perth, not to mention its own stunning interiors.  Chef Jed Gerrards food is contemporary and creative and follows the indigenous concept of six seasons.   The wine list is very fine, with a suite of international wines including a prestige selection, plus quality interstate drops.  And of the Western Australian offering, the rieslings, chardonnays and cabernets are particularly strong.  Due to the critical acclaim of the restaurant, with its strong local ethos, I would encourage the sommelier to continue to build on the list's good foundations and further enhance the local WA and wider Australian offering.
